Roasted Veggie Stack

METHODS
  1. Roast 2 trays of veggies.
  2. Sauté the onion, add garlic.
  3. Then add tomatoes, basil, sugar, pinch of salt, punch of cumin and coriander.
  4. Cook gently uncovered until it is cooked through, soft and reduced.
  5. Prepare yoghurt and lemon juice, plus some salt.
  6. Spread veggies in serving dish. Top with tomato mixture, yoghurt and za'atar.
