INGREDIENTS
- 2 trays of veggies (zucchini, broccoli etc.)
- Olive oil
- 1 medium onion
- 3 cloves garlic
- 4-5 roma tomatoes/3 regular tomatoes, chopped
- Sprig of basil
- 1 spoon castor sugar
- Salt
- Pinch of ground cumin
- Pinch of ground coriander
- 1 cup plain yoghurt
- 1 Tsp lemon juice
- Za'atar
METHODS
- Roast 2 trays of veggies.
- Sauté the onion, add garlic.
- Then add tomatoes, basil, sugar, pinch of salt, punch of cumin and coriander.
- Cook gently uncovered until it is cooked through, soft and reduced.
- Prepare yoghurt and lemon juice, plus some salt.
- Spread veggies in serving dish. Top with tomato mixture, yoghurt and za'atar.
