INGREDIENTS
- 1/2 cup chopped green pepper
- 1/4 cup chopped onion
- 1 clove garlic
- 1/2 teaspoon basil (crushed)
- 1/2 teaspoon rosemary (crushed)
- 2 tablespoons olive oil
- 1 cup long grain rice
- 1 cup chopped tomato
- 1 teaspoon salt
METHODS
- Fry pepper, onion, garlic and spices in hot oil until veggies are tender.
- Stir in rice, tomatoes and 2 cups water.
- Cook, covered over low heat for about 20 minutes or until rice is done.
