INGREDIENTS
- 1/2 cup butter
- 1 cup sugar
- 1 egg
- 1 1/2 cup flour
- 1 teaspoon baking powder
- 4 or 5 ripe bananas
- 1 teaspoon baking soda
- 2 tablespoons milk
METHODS
- Heat oven to 175˚C.
- In a mixing bowl, cream butter, sugar and egg until fluffy.
- Add flour, baking powder and bananas.
- In a separate bowl dissolve baking soda in the milk.
- Add this to the mixture.
- Beat until smooth.
- Put in a 9x9x2 dish and bake (grease it first) for 45 minutes or for 60 minutes in a loaf pan.
FOR ICING
- In a pot put a bit of icing sugar, a blob of butter and a squeeze of lemon. Pour a tiny bit of boiling water over butter. Mix.
