Let the dough rest before each kneading.
INGREDIENTS
- 1 cup sugar
- 1 cup butter
- 2 cups milk
- 2 teaspoons salt
- 8-9 cups flour
- 4 1/2 teaspoons dry or 1 teaspoon cake yeast
- 1 tablespoon cardamon spice
- 1/2 cup slivered almonds
- 1/2 cup citron
- 1/2 cup sliced glazed cherries
- 1 cup raisins
METHODS
- Melt butter, mix with sugar to dissolve, add scalded milk.
- Cool and add yeast dissolved in ½ cup warm water.
- Add salt and 4 cups flour and let it rise for 2 hours or until doubled in bulk.
- Punch down. Add cardamon, fruits and nuts and 4 more cups of flour.
- Work in another cup, kneading bread until it is no longer too moist.
- Let it rise again until doubled - 2 or 3 hours.
- Punch down again and knead slightly before shaping into loaves. Let loaves rise - 2 or 3 hours.
- Bake for 45-55 minutes at 175˚C.
- Glaze with confectioners sugar and milk if desired.
